An age-old interesting tradition of baking gingerbread cookies is still alive, and everyone loves it. With people turning towards Vegan, gluten-free, and sugar-free diets, the normal cookies loaded with butter and sweetness are feeling a little ignored. But can we ditch the tradition because of the butter and the extra calories? No, as here is a scrumptious recipe for vegan & sugar-free gingerbread cookies. - 1 1/2 cups almond flour
- 1/4 cup arrowroot or tapioca starch
- 2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon sea salt(fine salt)
- 1/4 teaspoon baking soda
- 2 Tablespoons melted coconut oil
- 1/4 cup pure maple syrup
- 1 tablespoon blackstrap molasses
- Extra arrowroot or tapioca starch, for rolling & cutting
For Icing
- 1 tablespoon coconut oil
- 1/4 cup powdered coconut sugar
- 2 tablespoons arrowroot or tapioca starch
- 1/4 teaspoon vanilla extract

- Preheat your microwave to 350 degrees Fahrenheit and take a baking tray and line it with a parchment paper.
- Take a large bowl, put a sieve on top and add the dry ingredients. You can add almond flour, starch, ginger, cinnamon, salt, and baking soda in the bowl. Stir well.
- Now, take coconut oil, maple syrup and molasses and add it in the same bowl of dry ingredients. Mix it well. You will see that the mixture will turn into a soft dough. Keep this mixture in the freezer for 30 minutes and let it settle.
- Take the dough and spread it on parchment paper. Before putting the dough, sprinkle arrowroot or tapioca starch on it. Keep the dough in the middle and flatten it with a rolling pin. The sheet should be 1/4-inch in thickness. Now, take out your cookie cutter and start making the gingerbread cookies. Keep collecting the remaining dough and flatten it again for more cookies.
- Let’s start with the last and final step. Take the cookies and put them on the baking sheet and bake them for 10 to 15 minutes. The cookies will turn golden brown and crisp. Let them cool completely.
- Now, mix the ingredients for the icing in a bowl and transfer it into a plastic roll that has a decorating tip. Give your gingerbread man eyes and a smile, and your delicious cookies are ready!
